Citrus salad with a minty vinaigrette
This simple combination of ingredients truly complements one another, creating a beautiful synergy of flavours, colours and textures. The vibrant colours of this salad is enough to make your mouth water. Citrus paired with a minty vinaigrette is a refreshing combination, while the sweetness of the rubies gives it just the right balance of flavours. Enjoy this salad with any protein of your choice. it will be equally good with lamb, pork, red meat or chicken.
Serves 4

Ingredients
60 ml (¼ cup) olive oil
60 ml (¼ cup) apple cider or white wine vinegar
10 ml (2 tsp) honey
30 ml (2 tbsp) chopped fresh mint
4-5 soft citrus or 2-3 oranges, peeled and sliced or segmented (see video below)
125 ml (½ cup) pomegranate rubies
Method
- Whisk oil, vinegar, honey and chopped mint together in bowl until well combined. Place citrus in a flat bowl and pour some of the vinaigrette over to coat the slices. Allow to marinate for a few minutes.
- Arrange the citrus on a serving platter and sprinkle with rubies. Serve immediately as a salad with the remaining dressing and any protein of your choice.
