But that’s not it yet – it all sits on an almond and butter layer, wrapped in a light and crisp butter pastry. Absolutely delicious. This Pink Lady® apple tart is one of the best I have ever made (and eaten). Yes, it’s a bit of extra work, but oh, so worth it.
In my house, lemon curd is an absolute favourite treat. There are so many ways we enjoy it – on a freshly baked scone, with fruit and berries as dessert or like in this recipe, on warm pancakes.

A festive dessert that will have everyone thinking you spent hours in the kitchen and yet, it’s quite easy to make. This ice cream cake can be made well in advance, as it can remain frozen for a week or more. When I heard that AMC Cookware added a 16 cm Baking tin to the existing 24 cm and 20 cm versions in the range, I knew it would be perfect for many exciting baking ideas. And it’s really cute too – if a baking tin can be cute!
As a child, this was one of my all-time favourite winter desserts. It’s called a self-saucing citrus pudding and just what you need on a cold day. I can imagine the flavours as I am writing. The feather light batter on top has a sweet-sour sauce which forms underneath as it bakes and is quite a surprise element if you have never eaten this before. So, if you’re making this for the first time, don’t be alarmed when you dish up – this is how it’s supposed to be.
