Quick banana & oat flapjacks

This recipe was inspired by my daughter Inge, who found a 3-ingredient flapjack recipe using banana, oats and eggs. I put my spin on it and developed this delicious recipe for Pharma Dynamics 6th book, the DASH Edition. This book went on to win a Best in The World award in the Professional Health and Nutrition category at the 2023 Gourmand World Cookbook Awards.

These heavenly flapjacks can be whipped up in no time, which explains their name: Quick banana & oat flapjacks! They are great for breakfast, a no-fuss brunch or even to pack into a lunch box. This recipe is even perfect for little ones starting to eat solids.

Get creative with wholesome toppings of your choice like honey, peanut butter, banana, lemon rind, nuts or toasted seeds.

Quick banana & oat flapjacks

Recipe developed for the DASH edition by Cooking from the heart SA, Pharma Dynamics
Makes about 24 flapjacks

Ingredients

1 cup (250 ml) uncooked ordinary oats

1 tsp (5 ml) baking powder

1 tsp (5 ml) ground cinnamon

2 medium-large ripe bananas, mashed

3 eggs, beaten

50 ml plain low-fat yoghurt

olive oil for frying

peanut butter, unsalted nuts, more fresh banana, honey and finely grated lemon rind for serving

Method

  1. Place the oats in a bowl and blend with a stick blender until it forms a fine flour. Add the baking powder and cinnamon.
  2. Mix the bananas with the oat flour until it forms a thick paste.
  3. Add the eggs and yoghurt and mix to form a batter. Take care not to overmix.
  4. Heat a large frying pan over a medium temperature and add a thin layer of oil. Drop spoonfuls (about 30 ml each) of batter into the pan. Fry for a few minutes on the one side until golden brown.
  5. Turn over and fry until cooked and golden brown on the other side. Keep warm and repeat with the remaining batter. Add more oil in a thin layer as needed.
  6. Serve four flapjacks as a portion. Enjoy with toppings of your choice from the list above. These flapjacks are also delicious with dollops of plain low-fat yoghurt, other seasonal fruit, or a thin slice of cheese.

Tip

1. This recipe is a great way to use overripe bananas.
