Tomato salad

This recipe is such a simple combination of ingredients resulting in a refreshing salad that can be served with any meal. Be creative with the herbs and different types of cheese to serve a ‘new’ salad every time. Replace the feta cheese for torn bocconcini balls (mozzarella cheese) and the origanum for fresh basil leaves for a classic Italian Caprese salad. Combining tomatoes and herbs with a fragrant olive oil and balsamic vinegar is a true synergy of flavours.
Ingredients
1 tbsp (15 ml) olive oil
2 tsp (10 ml) balsamic or red wine vinegar
black pepper to taste
4 large ripe tomatoes, or use a combination of large and baby tomatoes
1 slice feta, crumbled or any other cheese of your choice
2 tbsp (30 ml) fresh origanum leaves or other fresh herbs, like basil, mint or Italian parsley
Method
- Mix oil and vinegar in a bowl and season with pepper to form a dressing.
- Slice tomatoes and place with the feta in the dressing. Allow to marinate for 10 minutes.
- Arrange tomato and feta on a salad platter or place in a salad bowl, with the herbs scattered in between.
Tips
- Use a combination of large and baby tomatoes for an interesting look. Exotic tomatoes will add something extra special to this salad.
- Arrange the tomatoes on thinly sliced or shredded spinach leaves for extra colour and flavour.
- Add thin slices of cucumber for a variation, if preferred.
