Healthy outdoor eating
As the weather starts to become gradually warmer, we all enjoy eating outdoors, whether at a picnic, on a beach or just on your own patio or stoep. The kind of food we choose to eat during this time of year, is often different from the warmer cooked meals or one-pot-meals we prefer on colder days. The spring and summer seasons bring with them, a wonderful selection of fresh ingredients to make part of our meals. These include young veggies, a wide range of fruit to enjoy and lots of fresh herbs. Keeping dishes as fresh as possible does not only require less cooking, but will result in lighter and fresher meals, typically with more salad ingredients.
Homemade is best
Outdoor food often consists of snackier kinds of dishes. It’s always a good idea to rather prepare some homemade eats and treats, than just relying on shop-bought options. Making your own dip is really easy and so much healthier and more enjoyable than another pre-prepared version. It is also more affordable than buying one from the shop. Try these two delicious dip ideas – perfect to serve with an array of fresh seasonal fruit and veg for an outdoor picnic or for spring or summer snacking. Just make it part of your summer menus!
Cottage cheese dip with herbs and mustard
Serves 6
This versatile dip is so good and so easy to prepare. If you’re always rushed for time, this is a recipe you’d want to add to your repertoire. If you make it once, I guarantee you it will become a family favourite!
Ingredients
1 cup (250 ml) plain smooth low-fat cottage cheese (medium-fat or creamed cottage cheese will also work well!)
3 tbsp (45 ml) chopped fresh Italian parsley
2 tsp (10 ml) wholegrain mustard
Method
Mix all the ingredients until well-combined and enjoy as a delicious dip with veggie sticks or fruit like strawberries. Enjoy as part of a cheeseboard or as a sauce on a piece of meat or on burgers.
Serve it with a salad, add dollops on a side dish like roasted sweet potatoes or mushrooms or even with lightly steamed green veggies. It’s a delicious spread for any sandwich, wrap or as part of a pita filling.
Pea and yoghurt dip
Serves 4-6
This dip may not look like much, but it is DELICIOUS! All you need this festive season is a healthy dip and the options to dunk in are endless!
Ingredients and method
Rinse 1 cup (250 ml) frozen peas in warm water.
Drain well!
Using a food processor or a stick blender, blend peas with ¼ cup (60 ml) plain yoghurt and 1 tbsp (15 ml) chopped fresh mint until smooth.
Season with about ½ tsp (2,5 ml) each lemon juice and finely grated lemon rind, or to taste and black pepper. Serve as a dip with veggies or as a sauce with meat. It will also be delicious as part of a fresh bowl of food, like a poke bowl.
