Pink Lady® apple with Rooibos yoghurt

Quick and easy!
I was so excited when I developed this quick idea for Pink Lady® Apples because it is so easy and truly delicious. The crunchy, sweet taste of Pink Lady® Apples perfectly balances with the creamy yoghurt and flavour of the cinnamon. Shop-bought flavoured yoghurt is often high in sugar and hidden ingredients like preservatives, so flavouring your own yoghurt at home is much healthier. Rooibos tea and apples are a lovely combination and the naturally sweet flavour of Pink Lady® Apples in this recipe is out of this world! Cinnamon, vanilla and even the Rooibos add natural sweetness, so no added sugar is necessary. These apples aren’t just pretty but also full of all the good stuff like vitamins, minerals and antioxidants, making them the perfect snack. Serve this recipe as part of a breakfast, brunch or even as a quick dessert – your family will love it! Just remember to never peel a Pink Lady® Apple as so much for the healthy goodness sits in and just below the skin. To prevent the slices from turning brown easily, cut them with a sharp, smooth-bladed knife and rinse them under a bit of cold water after slicing.

Recipe

Pink Lady® apple with Rooibos yoghurt

Serves 4

Ingredients

500 ml (2 cup) plain yoghurt

125 ml (½ cup) strong Rooibos tea (see tip)

5-10 ml (1-2 tsp) ground cinnamon

5 ml (1 tsp) vanilla essence

Pink Lady® apple, sliced to your preference

Mint leaves and chopped almonds to garnish

Method

  1. Mix the yogurt and the Rooibos tea together
  2. Add 5-10ml of ground cinnamon and the vanilla essence
  3. Spoon into glasses and garnish with mint, chopped almonds and Pink Lady® apples

Tip

1. To make strong Rooibos tea, use 1 tea bag with 60 ml (¼ cup) water.
