My basiese botterkoekresep is juis só ontwikkel, dat dit maklik met verskillende geure aangepas kan word. So, toe ek ’n marmerkoek wou bak, was dit die perfekte resep om mee te werk. En aangesien ek nie van baie versiersuiker op ’n koek hou nie, het ek besluit om ’n alternatief te kies. Die eindresultaat was ’n klam Marmerkoek met suurroom en bessies – só mooi om na te kyk en ’n smullekker bederf.
I love Pink Lady® Apples and although they are not back in season yet, I am keeping this recipe on hand for the moment they are on shelf in May. And seeing that South Africans love to bake, I just have to share this delicious cake so long.

The natural sweetness of the apples and the ability to hold their structure, even when baked, is just what you need for this cake.
Before you think there is a mistake in this recipe, the combination of olive oil, lemon, almonds, polenta and fresh thyme is indeed correct and absolutely delicious. The light, fluffy texture will definitely impress your guests!
