Geroosterde eiervrug met ’n jogurtsous

Eiervrug is een van daardie groente wat nogal ’n skeidslyn kan wees. Party mense, soos ek, is dol daaroor en ander eet dit glad nie. Of soms is die huiwering omdat mense nie seker is hoe dit gaargemaak moet word nie. Om eiervrug te rooster, is moeiteloos en die gekaramelliseerde smaak met die jogurt, suurlemoen en kruie waarmee dit voorgesit word, is besonders.

Homemade is best – you’ve heard that so many times, but for this salad it is absolutely true. You can find three bean salads in tins, jars and even boxes, but this fresh take is so worth it!

Ek het nog nooit van daardie outydse gereg van boontjies-aartappels-en-uie wat saamgekook is, gehou nie! Altwee my oumas het dit gemaak en alhoewel party familie dol was daaroor, het ek maar langtand geëet. Groenboontjies is nou een van my gunstelinggroente, maar wel op ’n heel ander manier voorberei.
Groenboontjies met amandels is heerlik en makliker kan dit amper nie – soteer sampioene en boontjies vinnig in ’n pan, geur dit met balsamiese asyn en rond met geroosterde amandels af.

Veggies can brighten up any meal and this combination of brinjal, baby marrows, red pepper, tomatoes and onions is not only colourful but delicious too. The topping of cheese, herbs and lemon rind, is much healthier than a rich cream based sauce, often used for side dishes like a potato bake. This side dish is bound to become the favourite at your next braai.

Roasted veggies with hummus-yoghurt sauce

I could eat roasted veggies any day, especially if there’s cumin added! I also love hummus and in this dish it makes the perfect sauce. These veggies are also really versatile, they can be enjoyed as a light vegetarian meal or as a side dish with roasted chicken. Use them in any salad or stir into couscous and a handful or two of fresh coriander, basil leaves and roasted nuts. They are great at room temperature as part of a lunch box or delicious on pizzas or in sandwiches.
